Binary selectivity experiments on mixtures of 2-methoxyethyl esters of saturated stearic acid and the omega-3 fatty acid alpha-linolenic acid reveal that this three-component network structure provides nearly complete resolution of these two guests in the crystal and filtrate fractions. Separation of the 2-methoxyethyl esters of alpha-linolenic acid from the monounsaturated oleic acid is also possible, although with decreased efficiency in comparison to removal of the saturated fatty acid ester. We expect that further optimization of this technique will lead to improved polyunsaturated fatty acid ester enrichment toward a new processing method for the production of enriched polyunsaturated fatty acid concentrates.

520 # $a Previous organic hydrogen-bonded networks comprised of G and DS ions are characterized by the universal formation of a two-component host network within which guests are contained. We find that the DS ion 1,5-naphthalenedisulfonate (NDS) forms a typical two-component inclusion compound when crystallized from methanol in the presence of linear fatty acid ester guests. This network exhibits moderate selectivity for saturated fatty acid ester inclusion, but its applicability is limited by the competing inclusion of the solvent methanol. In 2-methoxyethanol, crystallization of fatty acid esters with G and NDS results in the formation of a new network topology in which saturated fatty acid inclusion is not limited by solvent competition. The formation of this new three-component host topology is temperature-dependent and arises from the disruption of the basic G-DS sheet structure through the incorporation of the solvent 2-methoxyethanol within the host network. The result of this new assembly is the creation of hydrophobically-lined pores with an available cross-section area of 4.1 x 4.7 A2.
520 # $a This dissertation describes a new method for the separation of polyunsaturated fatty acids through the synthesis of selective hydrogen-bonded crystalline networks. Demand for new processing methods for polyunsaturated fatty acids is motivated by the increasing recognition of their role in the prevention and treatment of a range of human diseases. We investigate the application of tunable hydrogen-bonded networks based on guanidinium (G) and organodisulfonate (DS) ions for the synthesis of channel inclusion compounds capable of selective incorporation of fatty acid esters based on their degree of unsaturation.
